I love patty pan squash and I am glad to know that I am not the only one as tigers and strawberries just published a great patty pan recipe. They are so adorable that I can’t resist buying them. They are firm textured and grill well. This time I cut them transversely to make a change and it gave a larger grilling surface.
I grilled mine and mixed them with some grilled red onion, grilled red pepper, left over tomatillo salsa, cilantro and lime juice and some red chili pepper flakes. I think it is going to make a good cold salad.
